- 1 12 lbs sweet potatoes (3-4)
- 12 cup vegetable oil
- 2 tablespoons maple syrup or 2 tablespoons pancake syrup
- 18 teaspoon ground nutmeg
- 18 teaspoon ground cinnamon
Directions

1Wash the potatoes well.

2Cut each potato in half lengthwise, then cut each half lengthwise into 3 wedges.

3In a medium sized skillet, heat the oil over medium-high heat.

4Place half of the potatoes in the hot oil, turning and cooking until they are crispy and brown.

5Remove the potatoes from the skillet and drain on paper towels.

6Place on a cookie sheet and keep warm in a 200 oven.

7Repeat with the remaining potatoes.

8In a shallow bowl, combine the syrup, nutmeg, and cinnamon.

9Using a pastry brush, brush the potato wedges with the syrup mixture; serve immediately.
