Ingredients

  • 8 lb. cukes, sliced
  • 2 gal. water
  • 2 c. lime
  • 2 qt. vinegar
  • 5 lb. sugar
  • 2 Tbsp. salt
  • 1 oz. pickling spice, tied in cheesecloth

Directions

    Let cukes soak in lime water 24 hours.

    Stir often.

    Wash well and drain.

    Add vinegar, sugar and salt.

    Let set 3 hours.

    Add pickling spice.

    Cook about 40 minutes until translucent.

    Seal hot in hot jars.

    Yields 5 quarts.
