- 3 c. thinly sliced cucumbers
- 1/2 tsp. salt
- 1 tsp. finely chopped ginger root
- 1/2 c. white vinegar
- 2 Tbsp. sugar
Directions

1Partly peel cucumbers, leaving strips of green and slice thin. Add salt to cucumbers and let stand for 15 minutes.

2Combine the remaining ingredients.

3Press excess liquid from cucumbers and add to sauce.

4Chill and serve as relish.

5You may add small pieces of thinly sliced mushrooms, carrots or abalone to decorate this relish.
