Cucumber Soup(Cold)

- 4 large cucumbers, peeled, seeded and cubed
- 2 bunches green onions
- 2 c. chicken broth
- 16 oz. plain yogurt
- 3 Tbsp. butter
- 2 Tbsp. flour
- salt and white pepper to taste
Directions

1Saute cucumbers and onions in butter until soft, but not mushy.

2Sprinkle in flour and stir.

3Add chicken stock; stir. Cover and simmer 10 minutes.

4Place in blender and blend until creamy.

5Refrigerate until ready to serve (allow at least 3 hours to chill).

6Before serving, gently stir in yogurt.
