Ingredients

  • 1 c. cornmeal
  • 1 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 2 eggs, beaten
  • 1 c. milk
  • 4 drops hot pepper sauce
  • 1/4 c. vegetable oil
  • 2 c. cooked rice
  • 2 c. shredded Cheddar cheese
  • 1 c. creamed corn
  • 1/2 c. chopped onion
  • 2 Tbsp. chopped green chilies

Directions

    In a small mixing bowl, mix cornmeal, salt and soda.

    In a large bowl, combine remaining ingredients. Blend in cornmeal mixture.

    Pour into a 12 x 7 1/2 x 2-inch greased baking dish. Bake at 350° for 35 to 40 minutes.
