- 1 (3 lb) salmon fillets
- 3 medium garlic cloves, peeled and chopped
- 1 tablespoon olive oil
- 12 cup currant jelly
- 1 tablespoon orange-flavored liqueur, like Triple Sec

1Preheat oven to 450 degrees.

2Sprinkle salmon fillet with 1 teaspoons salt and 1/4 teaspoons pepper.

3Place on foil-lined baking sheet coated with cooking spray.

4Roast salmon 25 minutes, or until nearly opaque.

5Heat broiler.

6Meanwhile while salmon is roasting, in a small saucepan over medium heat, cook garlic in oil for 2 minutes, or until slightly browned.

7Stir in currant jelly, liqueur, and 1 Tbs.

8orange juice.

9Increase heat to high; bring to a boil.

10Cook 8 minutes more, or until mixture thickens and can coat back of spoon.

11Stir in 1 Tbs.

12orange zest.

13Spoon 1/2 currant-orange mixture over salmon fillet.

14Broil salmon 3 minutes, or until golden.

15Transfer salmon to serving platter.

16Serve with remaining currant sauce.
