- 2 c. sifted flour
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1/4 tsp. ground ginger
- 1 egg, beaten
- 1 c. milk
- 1/2 c. melted shortening
- 1 c. currants
Directions

1Sift together the flour, sugar, baking powder, salt and ginger.

2Combine egg, milk and shortening; add to dry ingredients. Stir until all flour is moistened.

3Fold in currants.

4Spoon into greased muffin pans, filling cups 2/3 full.

5Sprinkle with topping.

6Bake at 425° for 20 minutes.

7Yields 18 muffins.
