  • 1 whole Medium Onion, Chopped
  • 1/2 cups Celery, Chopped
  • 1/4 cups Margarine
  • 1 Tablespoon Medium Curry Powder
  • 2 Tablespoons Flour
  • 1 can Diced, Ground, Or Crushed Tomatoes (14 Oz)
  • 1 whole Medium Green Pepper, De-seeded And Diced
  • 1/4 cups Fresh Parsley
  • 1 teaspoon Salt
  • 1/4 teaspoons Pepper
  • 1- 1/2 cup Chicken Or Vegetable Stock
  • 3 cups Cooked Chicken, Diced
  • 13 cups Raisins (optional)

Directions

    Saute chopped onion and celery in margarine in a large shallow pan; saute until onion is soft (about 5 minutes).

    Stir in curry and flour, cook 1 minute.

    Add tomatoes and green pepper, cook stirring often for 5 minutes.

    Stir in parsley, salt, pepper and broth.

    Lower heat and simmer covered for 10 minutes.

    Add chicken and raisins; heat through and serve over cooked rice.
