- 1 c. rice
- 1/4 c. butter or oil
- 1/2 c. finely chopped onion
- 1/4 c. finely chopped celery
- 2 Tbsp. parsley
- 3 c. chicken bouillon
- 1 c. boiling water
- 1 tsp. salt
- 1 1/2 tsp. curry powder
- 1 bay leaf
Directions

1Rinse and dry rice.

2Melt butter in skillet.

3Add rice and cook, stirring, until lightly brown, about 10 minutes.

4Add onion, celery and parsley and continue until vegetables are soft.

5Add chicken broth, water and seasonings.

6Cover and simmer over low heat about 20 minutes or until rice is tender.

7Makes about 6 servings.
