- 6 eggs
- 1/3 cup half-and-half
- 1 (3 ounce) package cream cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon butter
- 1/2 - 1 teaspoon curry powder
- 8 slices toast
- 2 teaspoons parsley, for garnish
Directions

1In a bowl beat together eggs and half-and-half.

2Crumble the cream cheese. Add to egg mixture. Season with salt and pepper.

3Melt the butter in a skillet. Add curry powder and make sure it blends well with the butter.

4Pour egg-cream cheese mixture into hot skillet.

5Reduce heat. Cook slowly, gently stirring and lifting the mixture from sides and bottome of skillet. Cook unti set but still moist and creamy.

6Immediately spoon scrambled eggs onto hot toast. Garnish with parsley. Serve.
