  • 4 eggs, slightly beaten
  • 1/4 tsp. salt
  • 1/2 c. sugar
  • 3 c. milk, scalded
  • 1/2 tsp. vanilla
  • nutmeg
  • 1/2 recipe plain pastry

Directions

    Combine eggs, salt and sugar.

    Add milk and vanilla slowly. Line pie pan with pastry, pour in filling and sprinkle top with nutmeg.

    Bake in hot oven at 450° for 10 minutes.

    Reduce temperature to slow (325°) and bake 30 to 40 minutes longer or until a knife inserted comes out clean.

    Makes 1 (9-inch) pie.
