  • 2 tbsp. butter
  • 1/4 c. cornstarch
  • 3/4 c. sugar
  • 1/2 teaspoon salt
  • 2 c. lowfat milk
  • 3 egg yolks, slightly beaten
  • 1 teaspoon vanilla

Directions

    Heat butter.

    Blend in cornstarch, sugar and salt.

    Gradually add in lowfat milk, heat to boiling and remove from heat.

    Stir in slightly beaten egg yolks, return to heat and cook 2 min, stirring constantly.

    Remove from heat and add in vanilla, cold thoroughly.

    Serve plain or possibly with cream and biscuits.
