Ingredients
- 2 cups Chicken Stock
- 2 Tablespoons Soy Sauce
- 1 Tablespoon Tahini Paste
- 4 Tablespoons Asian Chili Sauce
- 1 Tablespoon Dark Sesame Oil
- 1 Tablespoon Palm Sugar
- 1 teaspoon Ground Sichuan Pepper
- 1- 1/2 Tablespoon Balsamic Vinegar
- 1 pinch Salt
- 1 pound Chinese Noodles
- 1 Tablespoon Canola Oil
- 5 cloves Garlic, Minced
- 1 Tablespoon Fresh Ginger, Minced
- 4 whole Green Onions, Chopped And Divided Between White And Green
- 2 Tablespoons Spicy Kimchi, Chopped
- 1- 1/2 pound Ground Chuck
- 2 Tablespoons Chinese Rice Wine
- 1/2 cups Chopped Peanuts
- 1 cup Fresh Cilantro, Chopped
Directions

1Start by making the sauce.

2Combine all of the sauce ingredients into a saucepan and cook on low for about 25 minutes, stirring along the way.

3Once it comes to a simmer, keep it cooking on very low heat just so that it remains hot.

4During this time cook your noodles according to package instructions for al dente, then rinse with cold water, drain and set them aside.

5Next, add the oil to a large skillet and bring that up to a medium to medium high heat.

6Add in the garlic and ginger and stir that for a few minutes until they soften.

7Toss in the white parts of the green onion, as well as the kimchi and give that a stir.

8Next add in the ground chuck, and with a wooden spoon, begin breaking that up.

9Continue cooking the meat on medium high heat.

10You want it to caramelize and crisp up.

11Once you crisp up the ground chuck a bit, toss in the Chinese rice wine vinegar, and give that a good stir.

12OK, now we are ready to serve.

13Get an individual serving bowl out and add in some noodles.

14Next, add a generous amount of the meat mixture, then top it with a nice ladle full of the sauce.

15Top that with fresh cilantro, some of the green onions and some of the chopped peanuts.

16The flavor of these Dan Dan Noodles are rock solid.

17You get the comfort from a bowl of Asian noodles, but then you get this peppery aroma and spice from the Sichuan pepper.

18Thats alright though because the freshness of the cilantro and the texture of the peanuts take this one to the next level.
