Ingredients

  • 1 oz bran cereal (not flakes)
  • 1 cup brown sugar
  • 1 2/3 cups pitted dates, chopped
  • 1 cup milk
  • 1/4 cup self-rising flour
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 2 tsp orange zest
  • 1/3 cup pecans, chopped

Directions

    Preheat oven to 350°F. Grease and line a 7 x 4 inch loaf pan with parchment paper. Combine bran cereal, sugar, dates and milk. Set aside for 1 hour to soak.

    Add remaining ingredients to mixture. Transfer to prepared pan, smooth surface and bake for 45-50 mins, or until a skewer inserted in the center comes out clean. Let cool for 5 mins in pan then transfer to a wire rack to cool completely. Slice to serve.
