  • 1 c. (1 1/2 c.) chopped dates
  • 3/4 c. (1 1/8 c.) boiling water
  • 1 tsp. (1 1/2 tsp.) baking soda
  • 1 (2) eggs, well beaten
  • 1 c. (1 1/2 c.) sugar
  • 1 tsp. (1 1/2 tsp.) baking powder
  • 3/4 c. (1 1/8 c.) nuts
  • 1 Tbsp. (1 1/2 Tbsp.) butter
  • 1 3/4 c. (2 5/8 c.) flour
  • 1 tsp. (1 1/2 tsp.) salt
  • 1 tsp. (1 1/2 tsp.) vanilla

Directions

    Cut up dates.

    Add soda.

    Pour boiling water over dates and let cool.

    Cream butter and sugar.

    Add beaten eggs and date mixture.

    Mix well.

    Sift together flour, salt and baking powder. Add to date mixture.

    Add nuts and vanilla.

    Bake in loaf pan for 1 hour or until center is done in 350° oven.

    Serve with cream cheese and pineapple or with butter.
