Date Nut Cake

- 1/2 c. butter (1 stick)
- 1 c. sugar
- 4 eggs
- 1 lb. dates, coarsely chopped (save several whole dates)
- 6 c. chopped pecans (save several pecan halves)
- 1 tsp. salt
- 1 tsp. vanilla
- 1/2 c. bourbon
- 1 c. flour
- 4 tsp. baking powder
Directions

1Soak dates overnight in bourbon.

2Sift flour, salt and baking powder into bowl with dates and nuts.

3Cream butter and sugar. Add beaten egg yolks.

4Add to date and nut mixture.

5Add vanilla. Beat egg whites and fold into mixture.

6Bake in slow oven for 2 1/2 hours at 250°.

7At two hours, decorate top of cake with perfect pecan halves and whole dates.

8Continue to bake for the additional 30 minutes.
