Date Nut Cake

Ingredients

  • 1/2 c. butter (1 stick)
  • 1 c. sugar
  • 4 eggs
  • 1 lb. dates, coarsely chopped (save several whole dates)
  • 6 c. chopped pecans (save several pecan halves)
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/2 c. bourbon
  • 1 c. flour
  • 4 tsp. baking powder

Directions

    Soak dates overnight in bourbon.

    Sift flour, salt and baking powder into bowl with dates and nuts.

    Cream butter and sugar. Add beaten egg yolks.

    Add to date and nut mixture.

    Add vanilla. Beat egg whites and fold into mixture.

    Bake in slow oven for 2 1/2 hours at 250°.

    At two hours, decorate top of cake with perfect pecan halves and whole dates.

    Continue to bake for the additional 30 minutes.
