- 1 cup self raising flour
- 1 pinch salt
- 14 cup sugar
- 46 g butter
- 1 cup raisins
- 1 lemon rind, finely grated
- 12 cup milk
- 2 cups boiling water
- 1 cup brown sugar
- 65 g butter
Directions

1sift flour and salt together with sugar.

2lightly rub in butter with raisins and lemon rind.

3add milk.

4mix.

5spread out evenly in a greased 20cm x 20cm ovenproof dish.

6put to the side.

7put boiling water, sugar and butter in saucepan and heat until butter melts.

8spoon over contents of dish.

9bake at 180 degrees for about 45-60 minutes.

10serve while hot.

11this does have a self sauce but is still lovely with cream or custard if desired.
