- 10 to 12 ripe peaches, pared and sliced
- 1 Tbsp. lemon juice
- 1/4 tsp. almond extract
- 2/3 c. sugar
- 1/3 c. brown sugar, firmly packed
- 1/8 tsp. salt
- 1 Tbsp. quick cooking tapioca
- 1 Tbsp. butter or margarine
Directions

1Combine all ingredients, except butter or margarine.

2Let stand while making pie crust (one crust) or shortcake dough.

3(Use Bisquick, to which sugar and cream are added to taste.)

4Put fruit mixture into deep pie plate.

5Dot with butter or margarine.

6Place pastry or shortcake over peaches.

7Bake in hot 425° oven for 35 to 45 minutes.

8Serve warm.

9Use whipped topping or whipped cream as garnish, if desired.
