Ingredients
- 1 pound whiting
- 6 cups corn, peanut or vegetable oil
- 1 cup flour
- Salt to taste
- Freshly ground pepper to taste
Directions

1Rinse the whiting.

2Drain but do not pat dry.

3Heat the oil in a deep fryer to 375 degrees.

4Season the flour with salt and pepper.

5Put the whiting in the flour, and stir so that each piece is liberally coated.

6Shake off excess flour.

7Drop a third of the whiting into the oil, and cook about 5 minutes, until the fish is crisp.

8Drain on paper towels.

9Repeat with the remaining whiting.

10Serve with lemon wedges or lemon halves.
