- 1 whole Yellow Squash Or Zucchini
- 1 Tablespoon Olive Oil
- 2 cloves Garlic, Minced
- 1 Tablespoon Dried Italian Seasoning Blend (basil, Oregano, Parsley)
- Fresh Ground Black Pepper To Taste
- 1/2 cups Tomato Sauce
- Parmesan Cheese For Serving
- Salt For Sprinkling Over The Squash Strips

1Use a vegetable peeler to cut thin strips of squash or zucchini, stopping when you get to the seeds.

2Lay the squash strips out on paper towels and sprinkle with salt.

3Allow the squash to sit for 10-15 minutes.

4After 10-15 minutes, dab the squash with paper towels, then ball up the strips and squeeze out the excess water.

5Meanwhile, in a large skillet over medium heat, cook the garlic with the olive oil and Italian seasoning.

6Add the squash to the pan with some black pepper to taste and cook until the squash is tender (about 5 minutes).

7Stir in the tomato sauce and cook for 5-7 more minutes.

8Serve, topping with Parmesan cheese as desired.
