  • 2 medium eggs
  • 10 tbsp Sugar
  • 12 tbsp Flour
  • 250 grams Sour cream
  • 500 grams Apricots
  • 1 sachet Baking powder

    Preheat the oven to 170C

    Cut the apricots into halves and remove the core
  3. 3
    Put all remaining ingredients in a big bowl and mix them thoroughly, giving a creamy dough.

    Cover a baking pan ( I use for this purpose a medium sized pan (25x18cm) ) with baking paper.

    Then pour in the dough

    Egalize the dough, and tightly place all apricots on the top, without pushing them inside.

    With the cut surface up.

    Put on the medium rack in the oven and bake approximately 35 Min.

    (NOTE: The baking time, may strongly vary, depending on your oven and the accuracy of the displayed temperature.

    So preferably take a wooden toothpick and stick it inside, if no dough sticks to it, turn off the oven and let the cake rest inside for another 5-10 minutes.

    This gets the cake extra luscious.

    Let it cool for another 10 Minutes and then cover with a bit of confectioner's sugar.
