- 3 c. unbleached flour
- 3 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 2 c. shredded carrots
- 2/3 c. oil
- 1 c. honey
- 1/2 c. molasses
- 3 eggs
- 1 c. crushed pineapple in juice, undrained
- 3/4 c. chopped raisins
- 3/4 c. chopped walnuts
Directions

1Heat oven to 350°.

2Oil and flour two 9 x 1/2-inch round pans or one 13 x 9-inch pan.

3In large bowl, combine all ingredients, except raisins and nuts, at low speed until well blended.

4Stir in raisins and nuts.

5Pour batter evenly into prepared pans. Bake for 35 to 45 minutes or until cake feels firm when touched lightly. Cool completely.
