- 4 chicken cutlets
- 1 Tbsp. olive oil
- 1/2 c. white wine
- 1/4 tsp. salt
- 1/4 tsp. fresh ground pepper
- 1 c. mushrooms, quartered
- 1 Tbsp. lemon juice
- 1 Tbsp. honey mustard
Directions

1Place breadcrumbs and chicken in plastic bag and shake.

2Heat oil in nonstick skillet and add chicken.

3Cook 3 minutes on each side until browned.

4Add wine and next 3 ingredients.

5Cover, reduce heat and cook 15 minutes.

6Remove chicken and mushrooms with slotted spoon.

7Add lemon juice and mustard to skillet and stir. Cook 2 minutes.

8Pour on top of chicken and serve.
