  • 1 2/3 c. all-purpose flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • sugar substitute to equal 1 Tbsp. sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 egg, slightly beaten
  • 2/3 c. skimmed milk
  • 1/4 c. diet oleo, melted
  • 1 c. apples, minced

    Sift flour, baking powder, salt, sugar substitute and spices into a medium mixing bowl.

    Combine egg, milk and oleo.

    Add egg mixture to dry ingredients.

    Blend only until flour is moistened. Fold in apples and pour batter into 12 non-stick muffin cups, filling 2/3 full.

    Bake in oven at 400° for 25 to 30 minutes.
