- 1 2/3 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- sugar substitute to equal 1 Tbsp. sugar
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 egg, slightly beaten
- 2/3 c. skimmed milk
- 1/4 c. diet oleo, melted
- 1 c. apples, minced
Directions

1Sift flour, baking powder, salt, sugar substitute and spices into a medium mixing bowl.

2Combine egg, milk and oleo.

3Add egg mixture to dry ingredients.

4Blend only until flour is moistened. Fold in apples and pour batter into 12 non-stick muffin cups, filling 2/3 full.

5Bake in oven at 400° for 25 to 30 minutes.
