Diabetic Apple Pie

  • 1 (6 oz.) can frozen unsweetened applejuice concentrate, thawed or 1/2 can (12 oz.) can
  • 2 Tbsp. flour
  • 1 tsp. cinnamon (I use less)
  • 6 c. peeled sliced apples

Directions

    Prepare pie crust; set aside.

    Mix flour and cinnamon; slowly add to apple juice.

    Pour into 3-quart saucepan.

    Cook over medium-high heat, stirring constantly until boils and thickens. Remove from heat.

    Add apples to hot mixture; stir until well coated.

    Spoon into pie crust; dot with some butter.

    Cover with top crust.

    Bake at 450° for 15 minutes, then 350° for 35 minutes. If pie browns to quickly, cover with foil during last 15 minutes.
