  • 2 c. self-rising flour
  • 1 c. buttermilk
  • 1 c. prunes, cooked and mashed
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 3/4 c. vegetable oil
  • 1 Tbsp. liquid sweetener (I use Fasweet)

Directions

    Mix all ingredients well.

    Pour into 9 3/4 x 5 3/4-inch loaf pan which has been greased.

    Bake at 350° for 1 hour.
