Diabetic Raisin Bars

Ingredients

  • 2 c. water
  • 2 c. raisins
  • 1 c. unsweetened applesauce
  • 2 eggs
  • Sweet 'N Low or sweetener equal to 1 c. sugar
  • 1/2 c. oil
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg or allspice
  • 2 c. flour
  • 1 tsp. vanilla
  • pinch of salt

Directions

    Boil water and raisins until water is gone; let cool.

    Add applesauce, eggs, sweetener and oil; mix together.

    Blend in the rest of the ingredients.

    Spoon into greased 11 x 17-inch pan and bake at 350° for 35 minutes.

    Bake longer if pan is smaller.

    When cool, cut in bars.
