- 2 c. quick cooking rolled oats (uncooked)
- 2 Tbsp. granulated sugar replacement
- 1/4 tsp. salt
- 2 tsp. vanilla extract
- 1/2 c. liquid shortening
- 1 egg, well beaten
- 1/2 c. walnuts, very finely chopped
Directions

1Combine oats, sugar replacement, salt, vanilla and liquid shortening in medium mixing bowl; stir to mix well.

2Cover and refrigerate overnight.

3Add beaten egg and chopped walnuts; stir to blend thoroughly.

4Pack a small amount of mixture level into teaspoon.

5Pat out onto ungreased cookie sheet.

6Bake at 350° for 15 minutes.

7Yields 42 cookies.
