- 2 lb. Ocean perch
- 1/2 c. pineapple juice
- 1/4 c. steak sauce
- 1 tsp. salt
- dash of cayenne pepper
Directions

1Remove skin from fillets and cut into serving-size portions. Place fish in a single layer in a shallow baking dish.

2Combine remaining ingredients and pour over fish.

3Let stand for 30 minutes, turning once.

4Remove fish, reserving sauce for basting. Place fish on well-greased broiler pan.

5Broil about 4 minutes. Turn carefully and baste with sauce.

6Broil approximately 4 more minutes.
