- 10 lb. medium size cucumbers
- 1 c. salt
- 1/4 c. mixed pickle spices
- 2 1/4 qt. vinegar
- 2 Tbsp. sugar substitute
Directions

1Wash and cut cucumbers into slices about 1/4-inch thick.

2Mix cucumbers and salt.

3Let stand overnight.

4In the morning, drain and press out all the juice possible. Rinse once in cold water. Combine vinegar, sugar substitute and spices. Boil 1 minute. Add cucumbers and simmer 5 minutes.

5Pack cucumbers into clean, hot sterile jars to within 1-inch of top. Fill jars with hot liquid to top.

6Seal tightly.

7Makes about 12 pints.
