Ingredients
- 3 to 4 lb. beef pot roast
- 1/4 c. flour
- 3 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. oil
- 1 medium onion, sliced
- 1 tsp. dill weed
- 2 Tbsp. vinegar
- 1/2 c. water
- 1/2 c. coarsely grated carrots
- 2 Tbsp. flour
- 1/2 c. water
Directions

1Combine 1/4 cup flour with salt and pepper.

2Dredge roast in flour.

3Brown in oil on stove in frying pan.

4Place in roaster. Add onions, dill weed, vinegar and 1/2 cup water.

5Cover; cook slowly for 2 hours.

6Add carrots and cook 1 hour.

7Remove meat to heated platter.

8Pour liquid from roaster.

9Mix 2 tablespoons flour and 1/2 cup water.

10Add to cooking liquid, stirring constantly.
