Dilled Mashed Potatoes

  • 1 1/2 pounds Yukon Gold potatoes, peeled and sliced into 1/4-inch slices
  • 1/2 cup 1% low-fat milk, warmed
  • 1/2 cup (2 ounces) shredded reduced-fat sharp Cheddar cheese
  • 1 tablespoon light stick butter, softened
  • 1/4 teaspoon dried dill
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons finely chopped fresh parsley

Directions

    Place potato in a large saucepan; add water to cover. Bring to a boil; partially cover, reduce heat, and simmer 12 minutes or until tender. Drain potatoes, and return to saucepan.

    Place saucepan over very low heat; add milk and next 5 ingredients. Mash potatoes with a potato masher; stir in parsley.
