  • 4 lb. green beans
  • 7 whole red peppers
  • 7 dill heads
  • 7 whole cloves garlic
  • 5 c. vinegar
  • 5 c. water
  • 1/2 c. less 1 Tbsp. pickling salt

Directions

    Wash beans, cut beans into length of pint jars, keep jars hot. In each jar place 1 dill head, 1 clove of garlic and 1 whole pepper.

    Pack beans, leaving 1/2 inch headspace.

    Heat water, vinegar and salt to boiling.

    Pour over beans and leave 1/4 inch headspace.

    Put plastic knife down in jars to get air bubbles out. Wipe rims of jars, put hot lids on and tighten.

    Put in water bath. Keep water at 185° for 10 minutes.

    Use meat thermometer to check temperature of water periodically to make sure temperature stays at 185°.

    Makes 7 pints.
