- 4 lb. green beans
- 7 whole red peppers
- 7 dill heads
- 7 whole cloves garlic
- 5 c. vinegar
- 5 c. water
- 1/2 c. less 1 Tbsp. pickling salt
Directions

1Wash beans, cut beans into length of pint jars, keep jars hot. In each jar place 1 dill head, 1 clove of garlic and 1 whole pepper.

2Pack beans, leaving 1/2 inch headspace.

3Heat water, vinegar and salt to boiling.

4Pour over beans and leave 1/4 inch headspace.

5Put plastic knife down in jars to get air bubbles out. Wipe rims of jars, put hot lids on and tighten.

6Put in water bath. Keep water at 185° for 10 minutes.

7Use meat thermometer to check temperature of water periodically to make sure temperature stays at 185°.

8Makes 7 pints.
