- 4 c. all-purpose flour
- 1 pkg. active dry yeast
- 1 c. plus 2 Tbsp. milk
- 1/3 c. sugar
- 1/3 c. shortening, margarine or butter
- 1/2 tsp. salt
- 2 eggs
Directions

1Combine 2 cups flour with yeast.

2Heat and stir milk, sugar, shortening and salt just until warm.

3Add to flour mixture along with the eggs.

4Beat with electric mixer on low speed for 30 seconds.

5Beat on high speed 1 to 3 minutes.

6Using a spoon, stir in as much of remaining flour as you can.

7Turn dough out onto a lightly floured surface.

8Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).

9Shape dough into a ball.

10Place in greased bowl, turning once to grease surface.

11Cover and let rise in a warm place until doubled, about 1 hour (for high altitude, punch down and let rise again).

12Punch down and turn out onto lightly floured surface.

13Divide dough in half.

14Cover and let rest 10 minutes. Grease muffin pan and put 3 little balls in each one (approximately 1 tablespoon per ball).

15Cover and let rise in warm place, about 30 minutes.

16Preheat oven to 375° and bake for 12 minutes.

17Makes 18 to 24 rolls.
