  • 10 whole Eggs
  • 2 packages (16 Oz. Package) Jimmy Dean Sausage

    1. Boil 10 eggs; you want them hard boiled. Place cooked eggs in cold water for a few minutes for easy peeling. Peel your eggs then put aside.

    2. Take your room temperature packs of sausage. You are going to divide each package into 5 sections per package.

    3. Flatten the sausage evenly in your palm, place a hard boiled egg in the center of the flattened pattie and mold the sausage around the egg. Roll the egg in your hand to distribute the sausage around the egg evenly. You do not want any egg showing through.

    4. Next, put your dinosaur eggs in either a large cast iron pan (my preferred method) or baking sheet. Be sure to coat the pan with cooking spray so they do not stick. You will place them in a preheated 350 degree oven for approximately 40 minutes.

    5. Be sure to turn your eggs every 5 minutes or so for even browning. Be careful when handling (use tongs if possible) so the sausage does not come off the eggs.

    6. When done, place the dinosaur eggs on a large paper-towel-lined plate and soak up any excess grease. Let cool and serve. These are very filling and reheat nicely in a microwave.
