Ingredients
- 1 1/2 lb. salmon (one piece)
- 1/2 lemon
- 1/2 onion, sliced
- salt and pepper
- 1/4 tsp. dried tarragon leaves
- 1/4 c. chopped parsley
- 1 clove garlic, minced or pressed
- 1 Tbsp. butter or margarine
- 1 medium tomato, sliced
- dill and lemon slices for garnish
Directions

1Pat dry salmon. Should be cleaned and opened for stuffing. Squeeze lemon into fish cavity.

2Place on buttered piece of foil. Fill salmon with tomato and onion slices.

3Season with salt, pepper, tarragon and parsley. Close foil around fish.

4Bake at 425° for 25 to 30 minutes.

5Melt butter in skillet.

6Saute garlic and diced tomatoes. Remove salmon to serving dish.

7Spoon any juice over the fish.

8Serve with sauteed tomatoes. Garnish with lemon slices.
