  • pastry for single crust pie
  • 3 slightly beaten eggs
  • 1 1/4 c. sugar
  • 1/2 c. butter, melted
  • 2 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 1 (7 oz.) coconut, flaked
  • 1 c. finely shredded coconut

    Line a 9-inch pie plate with prepared pastry. Stir together eggs, sugar, melted butter, lemon juice and vanilla. Stir in the coconut (mixture will be thick). Spoon coconut mixture into pastry-lined pie plate. Bake in a 350° oven for 35 to 40 minutes or until pie is set and top is golden. Makes 10 servings.
