  • 1 8 oz. loaf French baguette
  • 6 roma tomatoes, chopped
  • 1/2 c. sun-dried tomatoes, packed in oil
  • 3 cloves garlic, minced
  • 4 Tbsp. olive oil, divided
  • 2 Tbsp. balsamic vinegar
  • 1/4 c. fresh basil, stems removed
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 c. shredded mozzarella cheese

    In large bowl, combine the tomatoes, sun dried tomatoes, garlic, olive oil, vinegar, basil, salt and pepper.
