Ingredients

  • 1 1/2 c. all-purpose flour
  • 3/4 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. each: salt and nutmeg
  • 1 egg
  • 1/2 c. milk
  • 1/2 c. margarine
  • 1/2 tsp. vanilla
  • 2 Tbsp. jelly or jam
  • 1/2 tsp. cinnamon

Directions

    In a bowl, mix flour, 1/2 cup sugar, baking powder, salt and nutmeg.

    In another bowl, beat egg with milk, 1/3 cup magarine and vanilla.

    Add flour mixture and stir just to moisten.

    Equally spoon half the batter into 12 buttered muffin cups.

    Add 1/2 teaspoon jam or jelly to each.

    Top equally with remaining batter. Bake in a 400° oven until deep golden (18 to 20 minutes).

    Do not overbake.
