  • 4 doves or 9 quail
  • salt and pepper
  • 1/2 c. water
  • juice of 1 lemon
  • bacon drippings

Directions

    Clean birds and split them down the back.

    Sprinkle with salt and pepper.

    Brown in bacon drippings in a heavy skillet for 20 minutes, turning frequently.

    Add lemon juice and water; cover and bake at 350° for about 45 minutes or until tender.

    Baste frequently during baking, adding water, if necessary, to prevent sticking to the pan.

    Serves 2.
