  • 2 teaspoons Almond Extract
  • 1 cup Chopped Pecans (optional)

Directions

  1. 1
    Preheat oven to 350 F.
  2. 2
In a large bowl add the 2 cups of sugar and 2 cups of flour along with the 1/2 teaspoon salt. Stir to combine and set aside.
  3. 3
In a medium bowl combine the 2 beaten eggs, 1 cup buttermilk, 1 teaspoon soda, 1 teaspoon vanilla, and 2 teaspoons almond extract and set aside.
  4. 4
In a large skillet or sauce pan over medium heat, add 1 stick butter, 1 cup Dr. Pepper, 1/2 cup cocoa powder and 1/2 cup vegetable oil. Bring to a boil and whisk, stirring constantly until all ingredients are dissolved and well mixed. Add the flour/sugar mixture and beat well. Remove pan from heat. Add the buttermilk/egg mixture and stir until well blended.
  5. 5
Pour batter into a greased/floured 10x15 sheet cake pan. Place pan in a preheated 350 F oven. Bake cake for 25-30 minutes.
  6. 6
While cake is baking, start the frosting by melting 1 stick butter in a medium sized sauce pan over low heat. Add the 6 Tablespoons cream and 1/2 cup cocoa. Whisk over low heat until cocoa powder is well dissolved and mixed with the butter and cream. Remove pan from heat and add 1 pound of powdered sugar, 1 teaspoon vanilla, and 2 teaspoons amond extract. Use a mixer to beat icing until it is smooth and creamy. Add 1-2 tablespoons of extra cream if needed. Add nuts if desired.
  7. 7
Spread frosting over cake as soon as it comes out of the oven. Allow cake to cool before cutting.

This recipe is a variation of my Coca Cola Cake recipe, made with Dr. Pepper instead of Coke. I've also added almond extract and extra buttermilk.
