  • 2 cups flour
  • 34 cup brown sugar
  • 12 cup pecans
  • 14 teaspoon salt
  • 10 tablespoons unsalted butter (cut into 1/2 inch pieces and chilled)
  • 1 12 cups sweetened flaked coconut
  • 1 cup cream of coconut
  • 2 large eggs
  • 34 cup brown sugar, packed
  • 2 tablespoons flour
  • 1 12 teaspoons baking powder
  • 1 teaspoon vanilla
  • 12 teaspoon salt
  • 1 cup pecans, toasted and roughly chopped

Directions

    Preheat oven to 350 degrees and place oven rack in the middle.

    Line pan with foil and spray with non-stick spray.

    Crust: Mix everything EXCEPT for the butter in a food processor till coarsely ground.

    Add butter till consistency is coarse meal.

    Press firmly into pan and bake for 20 min or until golden brown.

    Cool for 20 minute.

    Topping: Combine coconuts in a bowl.

    In another bowl, whisk everything EXCEPT for pecans till smooth.

    Add pecans and pour filling over crust.

    Dollup heaping tablespoons of coconut mixture onto filling.

    Bake till golden brown, about 35-40 minutes.
