  • 4 to 6 split boneless chicken breasts, skinned.
  • 2 tablespoons curry.
  • 1/2 teaspoon cayenne pepper(less if prefer less heat).
  • 2 12 ounce bottles pale ale (your favorite).
  • Sea salt (to taste)
  • Ground pepper (to taste).
  • Enough water to cover the chicken.
  • Paprika.
  • Watercress (as garnish).

Directions

    Combine spices and beer in a deep sauce pan and bring to a boil, reduce heat to medium low. Immerse chicken and add water to cover. Simmer chicken to well done. Grill chicken just for grill marks,serve sprinkled with paprika, and garnish with watercress.
