Duck Gumbo

Ingredients

  • 2 ducks, well-cooked and boned (I use more ducks, but 2 will do)
  • 1 1/2 sticks oleo
  • 1 c. flour
  • 2 qt. duck broth
  • 4 medium-sized onions, chopped fine
  • 1 small bunch celery, chopped fine
  • 1 large or 3 small bell peppers, chopped
  • 3 cloves garlic
  • 1 bunch green onions (tops included), chopped
  • 1 (5 oz.) can tomato paste
  • 2 (No. 2) cans tomatoes
  • 2 tsp. Accent
  • 2 Tbsp. dry parsley
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 2 Tbsp. salt
  • 1 Tbsp. black pepper
  • 2 Tbsp. gumbo file
  • 1/2 to 1 tsp. red pepper (depending on taste)

    Mix all together in a large pot and simmer approximately 2 hours, stirring often.
