Duck With Turnips

- 3 teal ducks, cleaned and halved, or 2 French ducks, cleaned and quartered
- 1 1/2 Tbsp. flour
- 1 onion, chopped
- 1 1/2 Tbsp. butter
- 1 sprig parsley (not chopped)
- 1 green onion (not chopped)
- 4 (1-inch) sq. celery
- 5 medium turnips, parboiled separately
Directions

1Fry duck lightly on both sides.

2Make gravy by browning the flour in butter.

3Add chopped onion and let mellow.

4Add parsley, green onion and celery with 3 cups of water.

5Let all simmer for 10 minutes.

6Add duck to gravy and cook until it begins to tenderize.

7Add parboiled turnips and cook until duck is tender.
