Duck With Turnips

Ingredients

  • 3 teal ducks, cleaned and halved, or 2 French ducks, cleaned and quartered
  • 1 1/2 Tbsp. flour
  • 1 onion, chopped
  • 1 1/2 Tbsp. butter
  • 1 sprig parsley (not chopped)
  • 1 green onion (not chopped)
  • 4 (1-inch) sq. celery
  • 5 medium turnips, parboiled separately

Directions

    Fry duck lightly on both sides.

    Make gravy by browning the flour in butter.

    Add chopped onion and let mellow.

    Add parsley, green onion and celery with 3 cups of water.

    Let all simmer for 10 minutes.

    Add duck to gravy and cook until it begins to tenderize.

    Add parboiled turnips and cook until duck is tender.
