- 6 oz. unsalted butter
- 8 oz. flour, sifted
- 6 oz. sugar
- 2 oz. crystallized ginger, chopped
- 1 egg, beaten
Directions

1Heat oven to 350°.

2Grease and line base of 8-inch cake pan. Cut butter into flour.

3Stir in sugar and ginger.

4Bind with most of the egg.

5Knead dough until pliable.

6Turn into pan.

7Push down to smooth surface.

8Pinch edge to decorate.

9Using a knife, mark surface lightly in a lattice.

10Glaze with remaining egg.

11Bake for 35 to 45 minutes, or until firm to touch.

12Cool in pan.
