  • 2 None refrigerated pie crusts
  • 5 large Granny Smith apples, peeled, cored and cut into chunks
  • 2 tbsp plus 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon or nutmeg
  • 1 None egg
  • 1 tsp milk
  • None None Powdered sugar, to sprinkle

    Preheat the oven to 400°F. Line a 9-inch pie dish with 1 of the pie crusts; trim edge. Prick bottom with fork. Line pastry with parchment paper and fill with baking beans. Bake for 10 mins; remove paper and beans. Bake for 10 mins; cool.

    Meanwhile, place apple chunks, 1/2 cup water, 2 tbsp of the granulated sugar, vanilla extract and cinnamon or nutmeg in a medium saucepan. Cook on medium heat for 10 mins.

    Drain excess liquid from apple mixture. Spread evenly in crust. Sprinkle remaining 1/4 cup granulated sugar over apple. Cover with remaining pie crust, crimping pastry edges together. Whisk egg and milk with fork. Lightly brush pastry top with egg wash.

    Bake pie for 20 to 30 mins until top is golden and apple is cooked. Sprinkle powdered sugar over pie.
