  • 1 Large Potato
  • Olive Oil
  • Salt And Freshly Ground Black Pepper

    Peel the potato. Slice into 1cm strips and place the strips in a pot. Fill with hot water and boil for 5 minutes. The strips will still be hard.

    Meanwhile, preheat the oven to 220 degrees Celsius (425 F). Line a baking tray with aluminum paper and drizzle with olive oil. Place in the oven.

    Drain the potatoes and return the potato strips back into the pot and stir constantly over low heat until the excess water has evaporated. This is very important to prevent the oil from splattering later on and injuring yourself. Place a lid on the pot and shake the pot - as vigorously as you want - to roughen the sides of the potato strips. Tumble the potatoes into the hot oil and stir to coat the potato in the oil.

    Bake for 30 minutes to 45 minutes, turning the fries once during the course of baking. Drain on a kitchen paper and sprinkle with salt and pepper. Serve immediately.
