Easy BBQ Ribs

Ingredients
- 3 tbsp kosher salt
- 3 tbsp chili powder
- 3 tbsp brown sugar
- 3 tbsp paprika
- 3 tsp dry mustard
- 2 tsp ground black pepper
- 2 full racks pork ribs (5-6 pounds)
- 1 1/2 cup ketchup
- 1/2 cup water
- 1/2 cup brown sugar
- 2 tbsp cider vinegar
- 2 tbsp worcestershire sauce
- 2 tbsp chili powder
- 2 tsp garlic powder
- 2 tsp paprika
Directions

1Stir all rib rub (except ribs) ingredients together to combine well.

2Cut 4 (24x12 inch) pieces of foil and set aside.

3Ribs should be at room temperature.

4Pat dry with paper towels.

5Remove membrane on underside by cutting one end with a pairing knife then pulling off membrane with a paper towel in hand.

6Do for all racks.

7Cut racks in half crosswise and coat evenly with rub.

8Place two halves side by side in foil and close to seal.

9Repeat steps 5-6 for all racks.

10Store in fridge to marinate overnight or cook right away.

11Preheat oven to 325'F (165'C).

12If ribs were marinating, bring to room temp before cooking.

13Place packets of ribs in a rimmed baking sheet.

14Place another layer of foil over all packets of ribs.

15Cook for approximately 2 hours until ribs are fork tender.

16Turn over once during cook cycle to avoid burning.

17Place all BBQ sauce ingredients in a sauce pan.

18Bring to simmer over medium heat whisking occasionally.

19Reduce heat to low and continue whisking occasionally.

20Cook approximately 30-40 minutes to let sauce thicken.

21To finish ribs, coat them with BBQ sauce and grill or broil for 5 minutes with the meat side up.

22Turn ribs over coat with more BBQ sauce and repeat step 12.

23Repeat step 13 two more time (20 minute finish time total.)

24Cut the ribs between the bones and serve with remaining BBQ sauce on the side.
