Easy Chicken Milanesa

  • 25 saltine crackers, finely crushed
  • 2 Tbsp. KRAFT Grated Parmesan Cheese
  • 1/2 tsp. ground red pepper (cayenne)
  • 2 eggs, lightly beaten
  • 1/4 cup oil, divided
  • 4 small boneless skinless chicken breasts (1 lb.), pounded to 1/4-inch thickness
  • 2 cups torn mixed salad greens
  • 1/4 cup KRAFT Zesty Italian Dressing

    Mix cracker crumbs, Parmesan cheese and red pepper in shallow dish or pie plate.

    Dip chicken in eggs, then in crumb mixture, turning to evenly coat both sides of each chicken breast with the crumb mixture.

    on each side or until cooked through, adding the remaining 2 Tbsp.
